Sustainability is at the heart of everything we do. Through our partnership with Bardee, we give food waste a second life, transforming it into nutrient-rich fertiliser and protein products. This not only reduces landfill waste and greenhouse gas emissions but also helps create a more circular, regenerative food system. With an integrated installation of eWater, we’ve embraced a greener way of cleaning—using biodegradable disinfectants and sanitisers that are safer for our guests, our team, and the environment.

Our commitment extends beyond the kitchen. Through our partnership with Backyard Honey, we’ve invested in a thriving honeybee colony, playing a small but vital role in protecting pollination and biodiversity.

With over 15 years of experience in the food industry across Norway, Russia, Hong Kong, and Thailand, Head Chef Ryan Dunn has curated a contemporary Australian menu that showcases his global culinary expertise. His talent lies in blending diverse cooking styles to create extraordinary dishes that leave a lasting impression.

At the forefront of his cooking ethos is a deep passion for sustainability, ensuring that every dish celebrates Australia’s finest produce with respect for the environment. Drawing from his extensive background, Chef Dunn crafts a dining experience that captivates guests with wholesome, tasty dishes.
